Dhokla

Dhokla is a steamed savory cake made from fermented rice and chickpea batter, served with green chutney. It’s light, fluffy, and packed with flavor, making it a great snack or breakfast option.

Ingredients

  • 1 cup gram flour (besan)
  • 1/2 cup semolina (sooji)
  • 1/2 cup yogurt (curd)
  • 1 teaspoon lemon juice
  • 1 teaspoon ginger paste
  • 1 teaspoon green chili paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon sugar
  • 1 teaspoon fruit salt (Eno)
  • Salt to taste
  • Water as needed

For Tempering

  • 1 tablespoon oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon sesame seeds
  • 1-2 green chilies, slit
  • A few curry leaves
  • 1 tablespoon fresh coriander leaves, chopped

How to Make Dhokla

Mix gram flour, semolina, yogurt, lemon juice, ginger, green chili paste, turmeric, sugar, and salt into a batter. Let it rest. Add Eno just before steaming. Steam for 15-20 minutes. Temper with mustard seeds, sesame seeds, chilies, and curry leaves. Serve with green chutney.
